This week we had a friend over for piano lessons from my husband. For dinner after, I was going to make spaghetti and meatballs. I even made homemade linguine. Then I got home to start cooking and my husband had eaten the meatballs for lunch. So I looked around my kitchen and decided to make Taco Tuesday on Wednesday. The best thing to do when your dinner gets eaten for lunch is make tacos. These are fancy tacos filled with fancy things.
Ingredients: Kortni’s Kitchen
Tortillas, 4″ or 6″
Potatoes (roughly 1 for each person)
3 TBS bacon fat or butter
Eggs ( 1 for each person)
2 cups grated cheese (I used a Havarti & Gouda blend)
1 bushel of arugula
1 Fuji apple (quartered & sliced thin)
Directions:
1. Peel and dice potatoes. Then sauté them in a dutch oven or a large sauté pan with the bacon fat or butter. You know when they are done by sticking a fork into them – if the fork goes in easy, then they are done. Make sure you mix them often or they will stick to the bottom of the pan.
2. Grate your cheese if you did not buy it pre-grated. The nicer cheeses usually won’t come already grated, but don’t let this deter you. To have a fancy taco, you need fancy ingredients. Rinse the arugula and slice up the apples. I know you really want to skip the apples, but don’t. If you have ever had a taco with cabbage, the apple replicates that nice, crisp crunch. Plus, it is a great flavor enhancer.
3. Crack and scramble the eggs, adding a pinch of salt and pepper. Cook them and then set them aside.
4. Last step before assembly. Toast the tortillas. The correct way to toast a tortilla is to put it on the stove with an open flame. Then burn your fingertips by flipping it over. If you have an electric stove, this does not work that well. If you want to use the microwave, make sure you wrap them in a hand towel. This way they don’t dry out. Once all your pieces are ready, assemble and devour.
I know this is not your everyday taco. I eat tacos multiple days a week, and sometimes the same thing gets boring. This fancy taco is a nice change of pace. It has a mellow flavor with no oozing salsa or canned ingredients. The apple gives a crisp crunch and the Havarti & Gouda cheese bring a nice, creamy flavor. Plus, you can eat it at breakfast, making your Taco Tuesday an all-day experience. Choose three types of tacos for all three meals of the day!
